Yes. You can use MID-learn normally.
AAah right. Press learn on the touchscreen button. Then twist the encoder ( don’t press on it in the touchscreen) THEN turn the MIDI controller.
So left & right overall volume available at the keyboard.

This allows some rather impressive MIDI control of multiple parameters, particularly useful for aftertouch and such like…

Such control needs context. For example mapping aftertouch directly to a filter will step the parameter to zero on first detection then return it to zero on release which is seldom the requirement.
I think I submitted a feature request some time ago relating to this - something like allowing some maths to be applied to controller signals.
Some engines support controllers like aftertouch, e.g. Vitalium.
I’ve got an Ensoniq EPS which after some repairing is reckoned to have a pretty good polyphonic aftertouch on it.
I have a Casio VZ-1 with channel aftertouch.
