There is a current issue with the main board to control board flat cable-connectors that might be the cause of your symptoms:

Zynthian V5.1 FFC issue

I got my V5.1 kit today, assembly went smoothly, except the control board FFC, which didn’t feel quite right when plugging in (at both ends). After assembly, I got an error message on the screen. And no, it’s not supposed to be "part of the „experience” - but sometimes. things go wrong.
