Build advice for first DIY box 50-60% done

I realise a lot of these questions would have been covered before in discourse. However i find it hard to find advice that refers to the raspberry pi 5. From my understand some of the connections are different to earlier models, or i might be wrong.

Happy to be directed in the right direction if this is info that is easy to find.

Newbie, to electronics and programing But very keen to learn. I understand the fundimentalish. I have so far built a touch only build of version 5.1 on a raspberry pi 5 8 gb. A raspberry pi dac + and 5 inch touch Capacitive Screen. This all works well.

I would however love to add 4 push rotary encoders, one or two audio inputs. I may end up using ZOOM H4n as interface. I would also like to map a bluetooth programable numbpad to act as the buttons on the box.

With the rotary encoders can I connect them straight to a gpio break out board with bread board or do I need a different break outboard?

I was previously trying to map my Akai MPK mini plus to control the UI aswell as what I assign the controllers to.
