I’m in the process of finishing off the case for a pi4 custom zynthian build (with the 7" pi screen).
I’m also trying out getting the thing working on a pi5 with a fresh bookworm install.
The extra packages required to get it to stop complaining about missing header files were
libgpiod-dev
libjack-dev
liblo-dev
libsndfile1-dev
Another suggestion would be maybe to check the existence of the line that gets added to sources.list as otherwise the setup script keeps adding it. Although obviously this would not normally happen 
I had tried the Oram download a few weeks ago, but it wasn’t behaving on the pi5.
