The last three fresh installs of Vangelis I get to the point where no access point is visible and a device at http://zynthian.local cannot be located. Stuck at IP: Audio/MIDI(x). Am I doing something systematically wrong? I guess I can try to dig an ethernet cable out and try to get an IP address that way but I though those days were over.

No, that is still highly relevant.
Zynthian is housed in a sealed metal casing, which makes Wi-Fi always less reliable. Especially when performing an update, you are asking for trouble if you do so via Wi-Fi. Just grab that Ethernet cable and work from there. At least then you have a working base, and from there you can try to get your Wi-Fi working.
