I am sorry if this is a dumb question but I recently decided to have a look at the progress in Vangelis and I cannot seem to add FluidSynth instruments.
Tried a number of times with fresh install, works in Oram, after upgrading to Vangelis no soundfonts show up in FluidSynth.

Am I missing something or is this just not finished in Vangelis yet?

After selecting engine and MIDI channel, don’t you get into the bank/preset selection screen?
What happens when you push “CTRL/Preset” button?
Perhaps you are using a SD-image without soundfonts?

The problem on the presented screen above is that you won’t get into the preset menu with the preset button if you do not focus one of the engines control pages (but the mixer control page instead). You may be able to do so with the new chain view on the left though.
It wouldn’t solve anything if sf2 files aren’t shown anyway.

Correct, it goes straight to the second screen I posted above. “CTRL/Preset just gives that same screen.
This is the latest zynthianos-last-stable.img.xz full fat image downloaded today, as I mentioned it all works as expected before changing version to vangelis and updating.
I do not believe this is a noob error (unless the interface has changed) as have been using this daily for years now.
