Looks handy!
these SAMxxxx chips are a big family, found in numerous musical devices. With embedded keyboard and button decoders, led drivers, synth engines, effects, sampler capabilities with external storage… they are highly capable ! conceived by a french company called Dream.
The sam2695 has cropped up a couple of times before
so with this item you have a synth?
how to power it and how to control it?
Well to test mine I hooked up a grove connector and connected pin 1 to gnd, pin 2 to +5v and tied 3 & 4 together. Then I just plugged in a controller to the Midi in and some headphones to the audio out.
you can find the specs here to talk to it with midi:

I don’t see an advantage to the Seed Studio device. If they implement USB MIDI then it could be a better option but the simpler, cheaper m5stack device gives basically the same (useful) functionality. If the Seed Studio uses a different microcontroller implementation then there is capacity for more control.
